Tomato gin soup

With winter on its way, I thought I’d trawl the Internet for some warming ways to imbibe gin, and found this one from a site called “epicurious.”  So thanks to the cook who contributed this delicious sounding recipe – I’d never heard of gin soup before, and can’t wait to try it!

Ingredients

  • 5 skinned tomatoes
  • 3 cups beef broth
  • 1 tsp dried thyme
  • 1 lb sliced mushrooms
  • 1 tbs oil
  • 3 cloves garlic, skinned and chopped
  • 1/3 cup gin
  • Salt and pepper to taste
  • 1 cup whipping cream

(Serves 6)

Preparation

Coarsely chop tomatoes and cook over medium heat in broth with thyme for 10 to 15 minutes. Sauté the mushrooms in oil until almost soft. Add garlic and cook over low heat for 5 minutes. Add mushrooms to tomato mixture. Add gin and simmer 5 more minutes. Test for salt and pepper. Just before serving, add cream and heat gently.
